Belinda is the managing director of Spicers Vineyards Estate, Pokolbin, a luxury 12-room guesthouse that also operates a 50-seat restaurant and day spa.
She works alongside her husband chef Mark Stapleton who, together with business partners Jude and Graham Turner, have owned the 25-acre property on Hermitage Road for the past six years.
During that time the facility has been transformed from a boutique bed and breakfast into an acclaimed five-star, tourist destination.
Belinda has overseen the transformation and continues to work on upgrading the facility, which will soon include opening the Botanica Restaurant seven nights a week and increasing its seating capacity to 70.
Working to promote the training of young people in the tourism and hospitality industries has been one of Belinda’s joys.
The other has been promoting the Hunter Valley as a wonderful tourist destination.
