The establishment formerly known as the Fox Bar, will re-open in the next couple of weeks to be known as the Sax Bar.
“We want to offer the same experience as the Fox Bar but will be concentrating more on our wines,” Sax Bar proprietor Stephen Troy said.
“So we will be operating as a small bar with fine food and the menu will change fairly frequently. Ultimately, we want to end up with a really fabulous wine list, but that will take some time.”
Mr Troy and bartender Anthony Sarroff are also seeking suggestions from the public.
“We want our patrons to come forward and tell us what they want to see here,” Mr Sarroff said.
“We just want to create a place where people can come and have a nice time together.”
Also opening later this month at 307 High Street is Marmook and Poom Poom’s.
Recently taken over by the Adderley family of Maitland, the building is being transformed into a cafe and bar.
“We want to recreate a Darby Street, Newcastle, experience because there is nothing in Maitland that really does that,” Michael Adderley said.
“At the moment, if people want that sort of vibe they have to travel to Newcastle.”
