It’s spring, and the city’s first big crop of beetroot is ready to end up on your plate.
Producers at The Slow Food Earth Markets Maitland will be selling beetroot, and many other varieties of fruit and vegetables from 2pm until 6pm on Thursday.
And if you love homemade picked beetroot, it’s time to stock up and start preserving to make your summer salads amazing.
The Market Kitchen is back tomorrow with a dish that will leave you feeling as though you’ve stepped into the Mediterranean, when in fact, you haven’t left the city.
Greek-style spanakopita, which is a savoury spinach pie, will be made with local silverbeet, kale, lemons, eggs and feta cheese from Marrook Farm.
The dish will be sold for $15 a serve. All proceeds will go back into the market to help it expand.
