The man, his female former partner and four children were at a Colombard Street home about 9.30pm when the man and woman started to argue.
Police claim the woman grabbed a knife from the kitchen before the man was stabbed in the chest.
The pair continued to argue in the front yard of the home where the man collapsed.
Emergency services were called and the 30-year-old man was taken to John Hunter Hospital in a serious condition. Police said he underwent surgery for a collapsed lung.
The woman, 30, was arrested and taken to Maitland Police Station where she was charged with reckless wounding.
She was refused bail to appear in Maitland Local Court on Wednesday.
