A 49-year-old female employee was working at the Cessnock Road business about 5pm Friday when a vehicle stopped out the front and a man got out with a timber baseball bat.
Police said the man jumped the counter and demanded cash before he grabbed the cash register and emptied its contents into a purple sports bag.
The man fled into the vehicle and was last seen heading east on Cessnock Road.
Police believe the car was fitted with number plates stolen from Waratah on December 6.
Police conducted forensic examinations of the scene and have secured CCTV from nearby businesses, but are yet to make an arrest over the incident.
The man was described as medium build, 165-170cm. He was wearing a beige balaclava, sunglasses with blue lenses, dark track pants and a dark long-sleeve top.
Anyone with information is urged to call Maitland Police.
