The lab, run by Danes Specialty Coffee, will be located inside a shipping container that will be dropped into Maitland's Riverside Carpark, and will be an interactive experience for festival goers.
It will feature experts talking and answering questions, as well as there will be demonstrations over the two-day festival.
In 2018 and again in 2019, Danes were crowned the Champion Australian Roaster at the Australian International Coffee Awards, topping off a record haul of 61 gold, silver and bronze awards in the last few years for their origins, blends and cold brew.
"We are really excited to be part of Aroma this year and to be setting up shop in the Coffee Discovery Lab," Danes managing director Paul Jackson said.
"This is a great opportunity for us to showcase what we do and share our passion for coffee with a large number of people."
The Danes Specialty Coffee demonstrations will be happening at the Coffee Discovery Lab on Saturday at 11am, 1.30pm and 2.30pm and on Sunday at 11am, 12pm and 1pm.
They will also feature on the Flavour Stage on Saturday at 12.30pm and Sunday at 3pm.
Maitland Council's events officer Rebecca Dujin said this year was gearing up to the biggest yet for the coffee and chocolate festival.
"A coffee lab is an interactive and immersive experience where people can learn all about coffee," she said.
"We are very pleased to have Danes Specialty Coffee setting up shop in our Coffee Discovery Lab.
"It's going to make a great addition to what is already shaping up as one of the best Maitland Aromas we've ever had.
"It's something a bit different. We found the perfect partner with Danes. It's going to be a great weekend."
The Aroma Coffee and Chocolate Festival will be held on the weekend of August 10 and 11 from 10am to 4pm at the Riverside car park.
