A whopping 35 tonnes of food have been sold at the market since August last year and that is equivalent to more than 150,000 sales.

It's an incredible effort for a market that started after the city rescued 20 tonnes of pumpkin at a pop-up stall in The Levee in 2016.

But that's not the only good news.

There have been 325 varieties of food sold at the markets in the past year, which is a huge boost for the city's biodiversity.

And, more than 7 tonnes of unsaleable produce was rescued from earth market farmers and transformed into 4000 meals.

Those meals went to the less fortunate in the community.

Farmers, volunteers and shoppers took a moment to celebrate the market's 2^nd birthday - and it success over the last year, on Thursday.

There was orange cake with candied oranges on top - which took 10 days to make, and a rendition of Happy Birthday.

"We've come so incredibly far, we have improved biodiversity and given people choice - we've actually worked with the farmers to encourage them to diversify," earth market chairwoman Amorelle Dempster said.

"The customers are absolutely loving it - a customer came in this week and said to me 'have you got any purple cauliflower? Our kids love it'.

"We are creating a future that has all of this great diversity and choice.

"We've created the opportunity for our community to enjoy such a wide range of food."

Ms Dempster said the market was attracting young farmers and she hoped that trend would continue.

"We've created an opportunity for people to sell their produce," she said.

"We started with rescuing and what we are doing now is giving farmers hope for the future so they can see that this is a viable option for a career.

"Consumers have responded to the wide range of produce that is now available. For example, Romanesco are walking off the shelf. Who would have thought that in our community we could sell 100 of them? People are even talking to each other about them and talking up their benefits."

The market started with three producers and now has 12 regular farmers who attend along with a range of backyard growers.

Ms Dempster said the market would not be possible without Slow Food Hunter Valley and it's volunteers who collectively devote around 2000 hours to make it a reality.

She said the market's inclusion in Destination NSW's promotion of Maitland this year had also helped to put the market on the map.
