The Magpies, two points clear of Edgeworth before the round, scored the winner in the 93rd minute via an Andrew Swan header at a corner for a 3-2 win over the Jets Youth at Cooks Square Park.
The goal took them to 43 points, but they were already safely in top spot because Edgeworth (38 points) had gone down 3-0 to the Jaffas at Edden Oval.
"We knew Edgy were down at half-time, but we always wanted to claim the premiership with a win in an our own right," Magpies skipper Carl Thornton said.
"We didn't want to finish the season with a draw and other results going our way.
"Credit to the boys we got the result we deserved to finish in first place at the end of the season. It doesn't get much better than that.
"When the referee blew his whistle two minutes after Swan's goal the celebrations erupted on the bench and among fans.
The Magpies congregated at the southern end of the ground at Clarkey's Corner where they were joined by supporters in the team song before players and team coaches and support staff were presented with their premiership medallions.
Then the moment everyone had been waiting for as Thornton and Matty Thompson held the premiership cup aloft.
The Magpies found themselves 1-0 down within two minutes of the start of play.
Nick Cowburn levelled things in the 22nd minute and Thornton gave the Magpies a 2-1 lead in the 55th minute after scrambling a ball into the back of the net from a Cowburn corner.
The Jets struck back with Maitland-born Callum Gabrielle refusing to give up on a play. Matt Trott accidentally hit Gabrielle the back of the head with an attempted throw and Gabrielle fed the ball to Riley Smith who scored.
Thornton praised everyone involved in the club for the success on the field this season, which also included a round of 32 FFA Cup appearance.
"It's been a long time coming, credit to everyone involved in the club," he said.
"When I first talked to the club about coming here they had ambitions, they had goals they wanted to achieve and to do it within four years is incredible," he said.
"We're reaping the rewards of an incredible amount of hard work behind the scenes by so many people involved in the club.
"We're not done yet we still have the semis to go and hopefully the GF so half the job is done so hopefully a grand final win to go with the premiership."
Thornton said there was a double celebration for him in getting his first goal in NPL competition this year.
"We have a nude run for anyone who doesn't score a goal. I got a goal in the FFA Cup but the boys were claiming that it didn't count as it wasn't regular competition.
"I joked to them that I would get one today to make sure I missed out.
"I was just in the right spot at the right time. I didn't get much on it but it was enough to go into the back of the net and I'm stoked I'm not on the nude run."
Thornton said winning the title in a team with his brother Liam and their cousin Cowburn was special.
"It does make it a bit special, but so to does playing with it some of your best mates. Getting the chance to play with blokes like Ralphy was the major reasons I came to Maitland.
"To play with some of my great mates and have success, it doesn't get much better than that."
The Weston Bears stellar season fell just short of the semi-finals when they were denied a spot by a point with Broadmeadow Magic and the Lambton Jaffas finishing on 38 points with Edgeworth
The Bears did all they could to make the top four, beating Lake Macquarie 5-2 to finish on 37 points, but it was not enough. They ended up in fifth spot.
The Jaffas finished second ahead of Edgeworth meet again in the two-leg semi-finals series. Maitland will meet fourth-placed Magic.
