Salad ingredients are multiplying while the hearty winter varieties are at the end of their season.

Backyard grower Felicia Nguyen will have her freshly harvested garlic at the market on Thursday along with a wide range of produce including cherry tomatoes, asparagus, zucchini, radish, celery, edible flowers, garlic chive, lemongrass, preserved lime, luffa, Thai basil, perilla, mint, parsley, rosemary and dried herbs.

It has almost been two years since the avid gardener dug up her backyard to grow a range of Vietnamese vegetables and salad greens and bring them to the market.

There will also be a wide range of vegetables, pasture raised eggs, olive oil and dried herbs.

Ian and Kaylene Anderson from Wine Country Olives will be back with their oil, balsamic vinegar and extensive range of olives.

They sell kalamata olives, garlic and chilli olives, salad mix olives, herb and garlic olives, Sevillano olives, black Manzanilla olives and Ligurian olives.

Shoppers who want to buy olive oil can bring their own container in return for a discount.

The market starts at 12.30pm and ends at 5pm in The Levee, central Maitland.
