Sometimes it's easy to miss it when you're walking amongst the stalls, but, take a look at a list of the produce all of the stallholders bring and you'll be amazed.
There is so much choice, and that can only mean a good thing for our tastebuds - if we are willing to embrace new dishes.
A shopping list has been released ahead of the April 15 market to help make it easier for families to plan ahead.
"The producer list should be viewed as a shopping list - so people can have a look at what will be coming to the market and how they might utilise it in their cooking," Slow Food Earth Market Maitland chairwoman Amorelle Dempster said.
"It's also a good opportunity to plan your meals, which saves you money, and ensures you are supporting local farmers as much as you can."
Let's delve a little further into the variety, starting with Anita's Garden.
Have you tried her water spinach, climbing spinach or Egyptian spinach? What about betel or perilla leaves?
Or elephant ear from Felicia's Homegrown Veggies, or a range of meat products from Munni Farm.
"Our producers have seen the opportunity to diversify and have taken it. They aren't narrowing their focus and growing only a few types of vegetables, they are growing a wide range and in doing so they are helping to protect their income stream because if one crop fails they have others to rely on," Ms Dempster said.
"It's also beneficial for shoppers because they can buy a wide range of food in the one place - and it's all fresh so it will last a lot longer."
