Sophie Stapleford opened the scoring with a successful penalty.
Kaitlin Radstaak scored Maitland's second to give them a 2-0 lead at the break.
Olympic scored first after the break but the Magpies were not going to let this one go and Stapleford sealed the win with her second.
It was a memorable win for the Magpies overcoming Herald Women's Premier League competition heavyweights Olympic and Broadmeadow Magic to claim the trophy.
The Magpies and Magic semi-final went down to penalties after two 25 minutes halves.
Maitland had earlier qualified from their group with New Lambton and North Coast Football to advance to the semi-final of the competition which began on Friday night and continued through Saturday and Sunday.
Magpies president Ray Watkins said it was an incredible effort by the Maitland side which will stand them in good stead going forward towards the finals.
Maitland are third on the table behind Magic and Broadmeadow who have each beaten the Magpies twice this season in regular season matches.
"Beating both Olympic and Magic who lead the competition will give them a real boost in confidence," he said.
"They know now they can match the big teams in the league."
The Magpies will be waiting on scans to see the extent of a suspected hamstring injury to Madison Gallegos
