The driver of the vehicle, 76, died at the scene of the crash shortly before 1am, according to police.
The motorcyclist, 26, was taken to Royal North Shore Hospital where he died.
The grainy CCTV footage shows the headlights of the car growing brighter as it travels into view from the right of the screen.
The car and motorbike fly into view almost simultaneously, the car spinning nearly 180 degrees and bouncing from the force of the impact of the motorbike smashing into its side.
Smoke rises from the wreckage of the motorbike, which comes to rest in the middle of the road.
The car slowly turns left and drifts off the road and up the curb.
One eyewitness said the motorbike was travelling at "supersonic" speed along Centennial Avenue when it ran a red light.
"I was just about 300 metres away and I saw one bike was passing through like a supersonic," Indranal Ghose told news.com.au.
"He was probably riding at around 130 [kilometres per hour] or something and it was a red light, so I beeped the horn to warn him, so that he can stop."
His warning went unheeded, however, and the motorcycle ploughed straight into a car turning right at the intersection.
"I was just about 300 metres away and I saw one bike was passing through like a supersonic."
- Witness Indranal Ghose
"Straightaway, I see the bike was smashed completely," Mr Ghose said.
"The car was going down the hill so I tried to get out and tried to stop the car, and was doing a bit of CPR with the other guy because I noticed the bike rider, he was instantly dead, probably.
“I couldn't feel his pulse or nothing."
Superintendent David Driver told reporters that police had tried to stop the driver of the motorbike earlier in the evening but lost sight of it. They did not try to pursue him.
Mr Ghose urged motorists to drive safely and abide by signposted speed limits.
"This shouldn't happen. It's a 60 zone.
“People should know they have to follow the rules," he said.
"Be safe. Keep other people safe, too."
Police are urging anyone with information about the crash to call Crime Stoppers on 1800 333 000 or use the Crime Stoppers online reporting page https://nsw.crimestoppers.com.au/
