Police said a woman called triple-0 about 5.30pm screaming for help.
Officers attended the Lostock Road address where they found a 51-year-old man sitting on a lounge with a stab wound to his torso.
Paramedics rushed the man to John Hunter Hospital for emergency surgery.
Police allege the incident occurred after a domestic dispute which turned violent.
The woman allegedly fled the scene but was later found by police in the area.
Officers charged her with malicious wounding with intent to inflict grievous bodily harm.
Central Hunter crime manager Detective Inspector George Radmore said the pair were in a relationship for 12 years, but had little contact since they split two years ago.
The woman was refused bail to appear in Maitland Local Court on February 16.
