The market has been closed right through April due to COVID-19, but organiser Amorelle Dempster has confirmed she has been in negotiations with council and that it's all systems go for next week.
"We'll have to abide by social distancing requirements, but that shouldn't be a problem," she said.
"We'll be limiting it to one producer per stall - they'll be nicely spread out - and there will be tape on the ground to help keep people back the required distance.
"A few of our producers are older and would be at the higher risk level, so we want to keep everyone safe."
Ms Dempster, a former Maitland Citizen of the Year, said at this stage there will be nine producers present, although she's hoping for more, down from the 14 or 15 the market had before the drought and COVID-19 took hold.
"It's a goods start and we'll build it up from there," she said. "We have a beef producer from Gresford who plans to be there for the first time which is good.
"But yes, we want to build on the strong foundations we've laid over the past couple of years ... more stalls, more diversity."
While she admits she is not sure of the numbers the market will get to The Levee, she remains optimistic.
"I know a lot of people aren't working from their offices these days, but we also used to get a lot of people saying they wanted to get to the market but couldn't get away from work," she said.
"Now, working from home, they might get that greater flexibility to duck out and do some fresh food shopping."
She said now was a good time for the market with such produce as broccoli, cabbage, cauliflower, beans, potatoes, peas, pumpkins and snow peas available, along with winter greens such as spinach and Chinese broccoli.
The market will run from 8.30am to 1.30pm. She said the move to mornings had a hit, especially with pensioners.
