And with Slow Food Hunter Valley leader Amorelle Dempster’s golden salad you can recreate the season in a bowl.
Ms Dempster will be making the salad with five types of pumpkin – thanks to Oakhampton farmer Austin Breiner’s supply.
It will be mixed with feta, couscous, Asian greens from Aberglasslyn backyard grower Felicia Nguyen and a lime and honey dressing.
The demonstration will show shoppers how to use winter produce to reflect the warmer than average temperatures the city is experiencing.
The Mercury will film a live stream of the demonstration on its Facebook page at 2pm.
The Slow Food Earth Market in Maitland starts at 2pm and runs until 7pm. It features all the usual wide range of vegetables, honey, eggs, chicken, bread and pastries.
