The melee broke out after police were called to the Hunter River Hotel in the early hours of Saturday morning.
Police said a verbal altercation turned physical and officers stepped in to restrain a 19-year-old woman.
It is alleged the woman then tried to escape before punching a police officer in the face.
Police used pepper spray to subdue the woman, but a wrestle then broke out between her and an officer, causing the officer to suffer a knee injury.
Police said another constable was also spat at and a third officer was kicked in the scuffle.
The officers managed to restrain the woman before she was arrested and taken to Maitland Police Station.
The 19-year-old was charged with resisting arrest, affray and three counts of assaulting police.
She was refused bail to appear at Maitland Local Court on September 11.
