Reynolds recently launched Restaurant Trey at Lovedale's Emma's Cottage Vineyard, which officially opened for business last Wednesday.
The owner and head chef started his apprenticeship with Pokolbin's EXP, was head chef at COQUUN in Maitland's Riverlink Building, and has worked in other well-known restaurants in the Hunter Valley and Newcastle areas.
He grew up on the Central Coast, but has called the Hunter Valley home for the past 10 years and is one of the owners of Simply D'Vine Cafe at Cessnock, which he runs alongside partner Suzi Lyall.
Reynolds' aim with his new venture is to showcase and pursue his food philosophy, which has always been 'fresh is best'.
He has a strong focus on supporting small, local suppliers, believing that they show more dedication and passion for what they produce.
Reynolds, who was a featured chef at last year's Maitland Taste festival, makes the majority of his products in house, from house churned butter to fruit conserves and sauces to accompany his dishes.
He says he is always on the hunt for the hidden gems in and around the Hunter Valley and regularly forages for wild Australian ingredients whenever possible, so that he can add that special touch to his dishes.
Restaurant Trey, which was named after Reynolds' eldest son, offers a "refined dining experience" - from a two course option right through to a five course degustation with complimentary house-made bread and the choice of matched wines produced by Emma's Cottage Vineyard.
Reynolds' highly recommended dishes include the house-made black garlic and mushroom tortellini with a sage butter emulsion and his signature dessert dish of crème brulée vs crème caramel.
Restaurant Trey is located inside Emma's Cottage Vineyard at 438 Wilderness Road, Lovedale.
The restaurant is open for lunch from Wednesday through to Sunday and dinner on Friday and Saturday nights.
