David Griffin, who owns Bao Brothers with Nathan Martin, said the pop-up store at Stockland Green Hills food court will open its door officially on Saturday.
"We are really excited to be coming to Maitland. We know we have a lot of fans here so we want to give back to them a little bit," Mr Griffin said.

The popular Bao Brothers started in 2015 as a market stall which led into a food truck, before they expanded into a number of restaurants in Newcastle CBD and Charlestown.
Mr Griffin added there is potential for a permanent fixture for the Asian fusion eatery in Maitland.
"We are just going to see how we go. We will be at Stocklands for the next six months and then see what happens," he said. The new store will be giving away free bao to 200 lucky customers on Friday from 12pm to 2pm.
The eatery will be open from Sunday to Wednesday from 11am to 5pm and Thursday to Saturday from 11am to 9pm.
