Maitland Events officer Beth Anastasiou said the annual festival was a highlight on the city's calendar.
"This year is going to be a colourful celebration of culture with 25 different cultures represented," she said.
"We have a great program planned across two stages, and a fabulous large scale production finale on the Hunter River.
"We are anticipating more than 9000 visitors this year. This festival brings the community together.
"We will have a mix of dance, food, music and arts across the 25 cultures.
"We are a multicultural community and it gives those cultures an opportunity to come together."
The annual multicultural festival will transform The Levee with workshops, language lessons, lantern workshops and tasty international treats.
Belly dancer Dani Cooper will be running dancing workshops for children over the course of the day.
"It's my first time teaching at the festival," she said.
"I'm going to be teaching children's belly dance.
"The children can put on some little shimmy belts and a veil, and learn some movements
"It has a great multicultural feel ... and the variety of dance and food."
The heart of the festival will be the cultural villages which will offer free interactive experiences, delicious food sampling and arts and crafts for sale.
Maitland Riverlights Multicultural Festival will be at The Levee on Saturday, October 12, from 3pm to 9pm.
