Slow Food Earth Market Maitland is in The Levee

And while you’re there, try a trombocini and purple congo potato frittata with a tomato, zucchini and eggplant salad. 

Slow Food Hunter Valley leader, and Maitland Citizen of the Year, Amorelle Dempster will be making the dish in the market kitchen and selling it from the stand.  

So what is a trombocini? You’ve probably seem the at the earth market but not know what they were called. They are a type of summer squash, and Ms Dempster says they are delicious. 

“They are grown locally and they will be perfect in the dish,” she said.

“We’ve got so many eggplants at the moment, and there’s lots of tomato and zucchini around so I will be making a salad to go with the frittata.

“There are a lot of tomatoes around that are not suitable for sale but they are still delicious and will taste lovely in the dish.”

The congo potatoes are the star of the dish. Their vibrant purple insides are a visual delight. 

“The potatoes are an amazing colour, so it will be just beautiful,” Ms Dempster said.
