Returning to the same ground where they experienced success last season, the Stallions defended the 7-123 posted from their 20 overs by dismissing Paterson for 106 with 12 balls to spare.
Middle order cameos of 35 and 26 from Matt McLetchie and Jason Hicks saw Paterson recover from 3-24, but the A-grade newcomers lost their final five wickets for 16.
Shane Price (3-26) was the pick of the bowlers for Windsor Castle after top three batsmen David Parish (35), Shayne Bailey (33) and Aaron Clack (23) made the bulk of the runs.
Rod Faulkner and Christopher Rose split four wickets between them for Paterson.
In the semi-finals played earlier on Saturday, the Stallions overcame Tenambit Morpeth in their T20 grand final replay at King Park 5 and Port Stephens were upset by Paterson at Bill Bobbins Oval.
Windsor Castle made 147, with Michael Gavan top scoring on 44 before restricting Tenambit Morpeth to 9-133, which included figures of 4-28 from Clack.
In the other top-four encounter, Paterson restricted Port Stephens to 9-75 before getting the runs four down with 15 deliveries left.
An unbeaten 50-run partnership between Brad Merchant (35 not out) and Russell Presland (33 not out) saw Paterson home after Rose had taken 3-13 from two overs.
That was the last of the T20 commitments for A-grade in 2014-2015 and the one-day competition resumes this Saturday with the penultimate round.
Port Stephens (3.45) lead the way on the overall ladder in front of Raworth (3.09), Paterson (3.08), Windsor Castle (2.90) and Dungog (2.73).
